Reikan is a new fine dining Japanese restaurant opening in Kaplankaya, located within the grounds of Six Senses Kaplankaya. The restaurant operates fully independently and is part of an established international restaurant group.

The concept is refined and detail-driven, focused on sushi, omakase, and elevated Japanese cuisine. We are seeking a skilled and disciplined Sushi Chef to join the opening kitchen team and deliver exceptional quality and consistency at the highest level.

ROLE OVERVIEW

1. Prepare and present sushi and sashimi to fine dining standards
2. Execute omakase and tasting menus with precision and consistency
3. Maintain strict quality control of ingredients, knife work, and presentation
4. Work closely with senior kitchen leadership
5. Ensure smooth service during high-volume and peak periods
6. Maintain a clean, organised, and efficient sushi station

TECHNICAL & OPERATIONAL RESPONSIBILITIES

1. Handle fish and seafood according to best practice and food safety standards
2. Ensure proper storage, rotation, and freshness of all ingredients
3. Follow recipes, specifications, and plating standards
4. Maintain hygiene, cleanliness, and HACCP standards at all times
5. Support training and collaboration within the sushi team

CANDIDATE PROFILE

1. Proven experience as a Sushi Chef in fine dining or high-quality Japanese restaurants
2. Strong knowledge of sushi, sashimi, rice preparation, and knife techniques
3. Experience with omakase service highly preferred
4. High attention to detail and consistency
5. Calm, focused, and professional under pressure
6. Team-oriented with a strong work ethic
7. Fluent English preferred
