Fine Dining Japanese Restaurant

Location: Kaplankaya, Turkey

Reikan is a new fine dining Japanese restaurant opening in Kaplankaya, located within the grounds of Six Senses Kaplankaya. The restaurant operates fully independently and is part of an established international restaurant group.

The concept is refined and disciplined, centred on sushi, omakase, and elevated Japanese cuisine. We are seeking an experienced Executive Sous Chef to support the Head Chef in leading the kitchen operation and delivering consistent excellence at the highest level.

ROLE OVERVIEW

1. Support the Head Chef in all aspects of kitchen operations
2. Lead kitchen service in the Head Chef’s absence
3. Supervise, train, and develop the kitchen team
4. Ensure consistent execution of menus, recipes, and plating standards
5. Maintain high standards of quality, organisation, and cleanliness
6. Work closely with FOH leadership to ensure smooth service flow

OPERATIONAL & FINANCIAL RESPONSIBILITIES

1. Support food cost control, waste management, and portion consistency
2. Assist with ordering, stock control, and inventory management
3. Ensure compliance with hygiene, HACCP, and safety standards
4. Maintain kitchen schedules and discipline
5. Support opening preparation and ongoing operational improvement

CANDIDATE PROFILE

1. Proven experience as an Executive Sous Chef or strong Sous Chef in fine dining or luxury hospitality
2. Background in Japanese cuisine highly preferred
3. Strong leadership and team management skills
4. Excellent organisational and time-management ability
5. Calm, focused, and professional under pressure
6. High attention to detail and consistency
7. Fluent English preferred
