Fine Dining Japanese Restaurant

Location: Kaplankaya, Turkey

Reikan is a new fine dining Japanese restaurant opening in Kaplankaya, located within the grounds of Six Senses Kaplankaya. The restaurant operates fully independently and is part of an established international restaurant group.

The concept is elegant and refined, with a strong focus on sushi, omakase, and seasonal Japanese dining, delivered in a beautiful upscale setting. Reikan is being developed as a destination restaurant with long-term ambitions.

We are seeking an experienced General Manager to lead the opening and take full responsibility for both operational excellence and financial performance. This is a very rare and exciting opportunity for the right candidate.

ROLE OVERVIEW

1. Lead the restaurant from pre-opening through to full operation
2. Train, and manage a team of approximately 50 staff
3. Set and maintain high-end service standards aligned with fine dining Japanese cuisine
4. Be highly present on the floor during service
5. Oversee all operational functions including staffing, scheduling, procurement, and suppliers
6. Work closely with ownership and group leadership

FINANCIAL & COMMERCIAL RESPONSIBILITY

1. Ownership of P&L performance
2. Budgeting, forecasting, and financial reporting
3. Strong control of food, beverage, and labour costs
4. Support menu pricing and commercial decision-making while protecting quality

CANDIDATE PROFILE

1. Proven experience as a General Manager or Senior Restaurant Manager in fine dining or luxury hospitality
2. Experience with Japanese cuisine concepts (sushi / omakase strongly preferred)
3. Demonstrated experience managing large teams
4. Strong understanding of financials, margins, and cost control
5. Hands-on, detail-focused, calm leadership style
6. Fluent English required
