Fine Dining Japanese Restaurant

Location: Kaplankaya, Turkey

Reikan is a new fine dining Japanese restaurant opening in Kaplankaya, located within the grounds of Six Senses Kaplankaya. The restaurant operates fully independently and is part of an established international restaurant group.

The concept is refined and elegant, centred around sushi, omakase, and elevated Japanese dining, supported by a high-level bar program including premium spirits, sake, wine, and Japanese-influenced cocktails.

We are seeking an experienced Bar Manager to lead the bar operation and ensure consistent, high-quality execution of the beverage program at fine dining level.

ROLE OVERVIEW

1. Lead all bar operations during service
2. Recruit, train, and manage the bar team
3. Execute and maintain the beverage menu and service standards
4. Train bartenders on cocktails, sake service, wine, and bar procedures
5. Work closely with the General Manager and Restaurant Manager
6. Be present on the floor and behind the bar during peak service
7. Ensure smooth coordination between bar and floor teams

BAR & FINANCIAL RESPONSIBILITIES

1. Manage beverage costing, stock control, and ordering
2. Maintain strong control of beverage GP, wastage, and inventory
3. Support menu updates and implementation
4. Manage supplier relationships and product handling
5. Ensure consistency, quality, and compliance with brand standards

CANDIDATE PROFILE

1. Proven experience as a Bar Manager in fine dining or luxury hospitality
2. Strong knowledge of cocktails, premium spirits, wine, and sake
3. Confident with stock management, costing, and margins
4. Hands-on leader with strong training and leadership skills
5. Detail-oriented, calm under pressure, service-driven
6. Fluent English required
